- 1 1/2 cups oat flour see note
- 8 tbsp butter softened, sub half nut butter if desired
- 1/2 cup sugar
- 1/2 cup brown sugar slightly packed
- 2 1/2 tbsp water
- 1 tbsp ground flax seed
- 1 tsp vanilla extract
- 3/4 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp xanthan gum optional
- 1/2 cup chocolate chips
If you don't have any oat flour on hand, make that first. Pour 1 1/2 cups of old fashioned or quick cooking oats into blender or food processor and pulse/process for 1-2 minutes, or until they are a fine, powdery consistency.
Transfer to a small bowl and stir in baking soda, salt and xantham gum. Set aside.In another small bowl, combine ground flax and 2 1/2 tbsp water, stir and set aside until thickened and gooey. In the bowl of a stand mixer, or in a large bowl with a hand mixer, cream together butter, peanut butter (if using) and sugars, until light and fluffy. Scrape down sides as needed. Add flax 'egg' and vanilla a mix until combined.
