Have you ever made homemade enchilada sauce? It might sound like way more work than just popping a lid off of a can, but it’s really not! And it will knock your socks off if you’re used to the premade-in-a-can version!
It really is easy to make! If you’ve ever made gravy or thickened any sauce by first cooking a roux, you’ll recognize the process. Once you turn on the stove, it comes together quickly, so it helps if you have all your ingredients out and ready!
Start by heating up some oil in a skillet, then whisk in flour and cook for a minute. Add chili powder and cook for a little longer. Whisk in tomato paste, broth and seasonings and simmer until it thickens.
And that’s it! Now you’re ready to make some kickin’ enchiladas! Oh, one last tip, double the recipe and you’ll have head start on an amazing breakfast tomorrow. Huevos Rancheros, anyone?

This sauce is so good in my favorite Black Bean and Kale Enchilada’s!
Again, although I know I said it already, this homemade enchilada sauce is a delicious and easy way to make Huevos Rancheros!! I love them so much. They are super yummy with chicken eggs, but I’ve discovered that they can be just as good made with tofu too!
